I don’t know what got over me last night.
Maybe it was the two almost brown bananas in the fruit basket. A weekend away from home eating popsicles and trying on bridesmaid dresses.
Whatever the case may be, I wanted to bake.
But, I wanted to do something which I haven’t been able to ever do before…cook something gluten free AND vegan and chocolate…lol
3 tsp chia seeds + 6 TB of coconut cream
.5 of ripe banana
.25 c. of vegan butter
.5 c. of packed brown sugar
1 c. of coconut cream
.25 c. of whatever kinda milk you drink
1 TB vanilla
.5 c. of shredded coconut (not the crap that has sugar in it already)
.5 c. of vegan chocolate chips
2 c. of gluten free self-rising flour
.5 tsp. baking soda
1 tsp. baking powder
2 tsp. xantham gum
2 TB. of shredded coconut and brown sugar
Mix together the chia seeds and coconut cream and let sit for 15 minutes
Mash together the banana, vegan butter and sugar
Add in chia seed mixture
Add in milks and vanilla
Add in coconut and chocolate chips
Add in flour, xantham gum, baking soda, baking powder and xantham gum
Place in a pan of your choice. I choose an angle food cake pan (cause I’m weird) and grease it well with vegan butter or a cooking spray.
Top with the 2 TB of brown sugar and coconut for a nice crunchy topping
Place in a 350/170 degree oven for about 45-55 minutes
It’s a bit doughy
It had an awesome crust
Even the cat wanted a bite…get back cat. 😉
